What Is Bologna Made Of?

Bologna has been a popular deli meat for generations, but many people are surprised to learn what goes into it. Traditionally, bologna is made from finely ground meat—most commonly beef, pork, chicken, or turkey—combined with seasonings, spices, and curing ingredients. The mixture is blended until smooth, stuffed into a casing, and then cooked to create the familiar texture and flavor found in sandwiches around the world.

The exact ingredients vary depending on the manufacturer and the type of bologna being produced. Some recipes use only one type of meat, while others combine several kinds. Along with the meat, producers may add salt, pepper, garlic, paprika, coriander, mustard, or other spices to enhance the flavor.
